As the sun drops, Apollonia opens its doors to the final ritual of the year. Here, New Year’s Eve isn’t about the fireworks above, but the glow beneath.

Between 3pm and 5pm, Aperitivo Hour begins — a quiet ceremony of cocktails, small plates and conversation, where light filters low and the first pour signals the start of the night.

As Aperitivo Hour fades, the evening lingers. The bar flows with popular cocktails from the past and the ‘Playbill’ cocktail menu takes the stage, guiding you through four acts, each with its own story.

Stay for one, or stay until the new year arrives — the doors remain open as the city stirs above and the final hours unfold in their own time.
